Renowned knife designer Jens Anso takes up his wooden spoon and drawing board and conjures up a full-bodied menu of the finest chef’s knives for gourmets with the MKM Prima series. The versatile gyuto is a typical Japanese kitchen knife for preparing vegetables, fruit, fish and meat. It is often compared to the European chef’s knife because of its similar dimensions. Compared to the more famous Santoku, the Gyuto has a longer and narrower blade, which is especially beneficial for precise cutting of large cuttings. In this special version, the MKM Gyuto is equipped with a noble Takefu Damascus blade with 65 layers at a hardness of 61-63 HRC. Typically Anso, the handle is made of black FAT carbon, which eliminates the usual conventions in favor of modern, angular lines.
